In the cellar: the tirage

At the beginning of the month we carried out the tirage operation, i.e. the bottling of the Ombra cuvée and the 400.
As the wine passes from the tonneau to the bottle, it is blended with wine from other vintages, creating a cuvée that is capable of following a certain continuity and gustatory consistency. Indigenous yeasts and organic raw cane sugar are also added (for a maximum of 24 g/l), both necessary for the realization of the refermentation in the bottle and therefore the froth.

The refermentation process is very delicate and requires a lot of attention. For this reason it is constantly monitored by means of sentinel bottles (in the photo), in which an aphrometer is inserted which allows to test the internal pressure. Upon reaching 6 bars of pressure, the sugar can be considered completely consumed by the yeasts and therefore the second fermentation ( froth) has been achieved correctly.


In the vineyard: the vegetative awakening


March was a month of rebirth. The buds began to grow, came to life again. The increase in temperatures has considerably anticipated this phase, which is particularly evident in the Cru Cudula and in the Cru Campiani Est, where the gems are in a more advanced phase than in the Cru Civine.
In fact, the altitude and northern exposure of the Cru Civine, dedicated to Pinot noir, have allowed the buds to form more gradually and therefore more normally.

however, the awakening of the plants in the vineyard is proceeding well and the season is restarting.
